The Content of Water Extract, Total Ash, Total Polyphenol, Caffeine and Crude Cellulose of Tea Plant (Camellia sinensis L.) Old Leaves Grown in The East Black Sea Region

The aim of this study was to determine total ash and water extract values, caffeine, crude cellulose and total polyphenol content of old leaves of tea plant grown in East Black Sea Region. For this purpose, 532 old leaf samples of tea plant were taken from the first-year sprouts. East Black Sea Coastal Region considering the width of the tea cultivated areas of which Artvin: 58 samples (10.90 % of total leaf samples), Rize: 361 samples (67.86 % of total leaf samples), Trabzon: 101 samples (18.98 % of total leaf samples) and Giresun: 12 samples (2.26 % of total leaf samples). At the end of the research, water extract values of the tea samples taken from the tea cultivated areas varied in the range from 12.42 % to 3.81% with a mean of 33.88 %, total ash value: from 2.99 % to 8.92 % with a mean of 5.40 %, total polyphenol content: from 1.31 % to 21.67 % with a mean of 6.49 %, caffeine content from 0.142 % to 2.06 % with a mean of 0.668 % and crude cellulose content from 12.20 % to 23.82 % with a mean of 6.21 %. The lowest water extract content determined in Giresun with a mean of 32.38 %, total ash value in Artvin with a mean of 5.25 %, total polyphenol and caffeine in Giresun with a mean of 2.65 %, 0.40 % respectively, and crude cellulose content in Trabzon with a mean of 15.86 %. Consequently, substantial correlations were determined among water extract, total ash, total polyphenol, caffeine and crude cellulose content. It is considering that the quality parameters of tea plant`s old leaves have not negative effect on new sprouts according to Turkish Food Codex.
